Veggie Omelette Tortilla

This recipe is quick, simple, delicious and nutritious! The perfect combo for a lunch in our opinion. Filled with all the essential nutrients, that you need to thrive. This cashew dressing is also a Go-To that you can top everything from a salad, to this omelette or drizzle in your wrap!


1 portion

15 minutes

  • 1 tortilla wrap

  • 2-3 eggs

  • 2 tbsp herbs of your choice

  • 1/4 onion

  • 1 garlic clove

  • 5 cm sliced zucchini ( or other veggies)

  • 1 tbs pesto

  • 1 sliced tomatoes

  • Herbsalt

  • Olive oil

  • Top with the dreamy cashew dressing!!

    Cashew dressing :

  • 1 dl soaked cashews

  • 1/2 lemon ( the juice)

  • 1 dl warm water

  • 1 tsp vinegar

  • Herbsalt

  • Chili flakes

  • Little splash of agave

    Mix until a smooth dressing.

    Slice the onion, garlic and zucchini. Fry in olive oil until soften with salt and pepper.

    Whisk the eggs and add herbs, salt and pepper, then pour over the veggies.

    Put a layer of pesto on one side of the tortilla wrap. When the omelette is half cooked put the bread on top of the omelette. Let it cook on low heat and flip on the other side after a few minutes.

    Slice the tomato and when the omelette is cooked top with the sliced tomato and the creamy cashew dressing.
