Roasted Tomato Pasta

I mean who doesn't love a plate of pasta?

This pasta sauce is made all from scratch but yet so simple and quick to make, filled with flavors and Whole Foods and thereby nutrients to feed your body with love only.


4 portions pasta

35 minutes

  • 2 - 3 big tomatoes/ 300g small tomatoes

  • 2 garlic cloves

  • 1 bell pepper

  • 3 sundried tomatoes

  • 1/4 lemon ( the juice)

  • 1/3 chili

  • 1 tsp apple cider vinegar

  • 1 tsp honey

  • Feta cheese

  • Basil

  • Salt

  • Pepper

  • Olive Oil

  • Your choice of pasta

Turn the oven on 175 degrees.

Slice up the tomatoes and bell pepper, add them in a baking tray with the garlic cloves, olive oil, salt and pepper.

Roast in the oven for 20 minutes.

Meanwhile boil your pasta.

When the tomatoes and bell peppers are roasted, mix with the sundried tomatoes, honey, lemon, apple cider vinegar, salt and pepper until a smooth sauce,

Now mix the sauce with the pasta and top your plate with crumbled feta cheese and fresh basil.
