VV´s snack bar at RÒURI event

We loved to share VV´s feel good snacks with the Rouri community in Lisbon ! Here is the recipes from the event <3

Blueberry Banana Bread ( bites)

20 bites

Ingredient:

  • 4 dl oat flour

  • 2 dl almond flour

  • 4 tbsp chia seeds

  • 2 tsp baking powder

  • 1 tsp baking soda

  • Pinch of vanilla powder, salt & cinnamon

  • 5 bananas

  • 2 tbsp coconut oil

  • 1 dl milk of your choice

  • 1 tbsp apple cider vinegar ( don’t skip, this makes it fluffy)

Toppings:

  • Greek yoghurt

  • Honey

  • Berries

Heat the oven on 180 degrees

Blend all of the dry ingredients together.

Mix the bananas smooth

Now add the bananas & the rest of the ingredients with the dry ingredients & blend into a batter

Place it in a baking form wrapped in baking paper. ( or a bread form)

Bake in the oven for 35 minutes if doing bites, 45- 50 minutes if doing a bread.

Let the bread rest and then slice it and serve with the toppings

Mini Chocolate Chip Cookies

8 cookies / 16 mini

  • 2 dl / 85 g oats

  • 1 dl/ 50 g almond flour

  • 1/2 dl / 20 g coconut flakes

  • 40 g real butter ( room tempered)

  • 3 tbs agave syrup

  • 1 organic free range egg

  • 1 tsp baking powder

  • Pinch of salt + on top

  • 50 g dark chocolate

Turn on the oven on 175 degrees Celsius

Mix the oats into a flour. Then add the rest of the ingredients except the chocolate.

Blend until it’s a smooth dough and the butter is mixed with the batter.

Chop the chocolate into chunks and add to the batter.

Place in the fridge for 15 minutes.

Then form the cookies into cookie shapes on a baking sheet and sprinkle some sea salt on top aswell.

Bake in the oven for 10-15 minutes until they are golden.


Salty Pistachio Brownie

20- 25 snack bites

Ingredient:

  • 5 dl almond flour

  • 10-15 fresh picked dates

  • 5 eggs

  • 50 g room tempered real butter / coconut oil / ghee

  • 5-6 tbsp cacao

  • 1 tsp baking powder

  • 2 pinches of salt

  • A handful of pistachios

    Heat the oven on 175 degrees

    Add all ingredients to a mixer ( except the pistachios)

    Mix into into a smooth batter

    Chop the pistachios into chunks

    Place a baking sheet in a baking form

    Add the batter in the baking form and top with the pistachios and more sea salt.

    Bake in the oven for 10-12 minutes
