Veggie Fritters ( Kids friendly recipe)

Simple to make and filled with feel good foods.

Ingredients:

1 grated carrot

5 buckets of cauliflower/ broccoli

A handful of chopped cabbage

( Or your choice of veggies)

A handful of high quality cheese

2-3 eggs

1 tsp corn starch / psyllium husk

1 tsp herb mix

1 tsp garlic powder

Optional : salt and pepper

  • Grate and chop up the veggies in small pieces / mix them into chunks.

  • Add the rest of the ingredients and blend into a batter.

  • You can cook the veggie patties in the oven on 200 degrees, then add 1 tsp baking soda to the batter or you can pan fry them on the stove.
