Warming Coconut Curry

Sara Karling Hultén, a holistic recipe creator and nutritionist shares her knowledge about Whole Foods in this weeks interview and she also shares one of her recipe creations with us! This wholesome coconut curry is a blend of plant-based whole foods, carefully put together to create a balanced meal. Filled with complete protein, nutrients, antioxidants, and fibers.


4 servings

30-40 minutes

1 big yellow onion - finely chopped

• 3 garlic cloves- finely chopped

• 1 tbs grated ginger

• 3 tbs tikka masala

• 1 big sweet potato - diced

• 2 carrots- diced

• 1/2-1 red chili - finely sliced

• 1 block veg stock

• 400g chickpeas rinsed

• 400g (one can) coconut milk

• 400g crushed tomatoes

• 1 zucchini- diced

• 1/2 lime

• Salt and pepper

Bring a big saucepan to medium heat, drizzle some olive oil and then add onion, garlic, grated ginger & spices and fry for a few minutes.

Add sweet potato, carrots, chili, crushed tomatoes + half the can of water and some coconut milk + veg stock - stir and put on a lid on and let it simmer for 15 min.

Add zucchini + chickpeas let it simmer for about 5-10 min.

Add lime juice, salt, pepper and taste it.

Serve with some brown rice or bulgur, topped with coconut yogurt and coriander.

Top with more lime & chili if you like!
