Chicken & Cauliflower Tikka Masala

This warming meal is a balanced meal, filled with warming and grounding feel-good foods. It's rich in protein and fiber, as well as the superficial ingredients of the spices. Turmeric, known for its anti-inflammatory traits, as well as cinnamon, can help regulate blood glucose levels, while cayenne pepper has heart and metabolic health traits.   • 4 servings black rice / optional whole grain

  • 500g chicken

  • 1/2 cauliflower head

  • 1 bell pepper

  • 1 yellow onion

  • 1 garlic clove

  • 2 cm ginger

  • 400g coconut milk

  • 1 pack crushed tomatoes

  • 1 chicken broth / vegetable broth

  • 1 tsp honey

  • Butter/ Ghee

  • Sesame seeds optional

Tikka masala spice blend:

  • 2 tsp garlic powder

  • 2 tsp cumin

  • 2 tsp turmeric

  • 2 tsp dried coriander

  • 2 tsp paprika powder

  • 1/2 tsp cardamom

  • 1/2 tsp cinnamon

  • 1/2 tsp cayenne pepper

  • Salt & pepper to taste

Cook the rice following the package instructions. Slice the chicken, vegetables, and onion. In a pot, melt butter or ghee over low heat, then add onion, garlic, and ginger. Gently fry on low heat. Introduce all the spices, and sauté for a few minutes, stirring carefully to prevent burning.

Next, add the chicken and the remaining vegetables. After a few minutes, incorporate crushed tomatoes, coconut milk, honey and the broth. Allow the mixture to simmer for about 20 minutes until the chicken is thoroughly cooked.

Serve this comforting, nourishing meal with your rice and top of with some sesame seeds.
