Carrot Scones
8-10 scones
30 minutes
6 dl oatflour
1 dl almond four ( you can use 7 dl oatflour)
1 big/ 2 small shredded carrot
2 eggs / if wanting to make them vegan switch the eggs to 1 more tbsp chia seeds and 1/2 dl more water.
2 dl water
2 tbsp chia seeds
1 tsp salt
1 tsp baking powder
Top with pumpkin seeds
Blend the flours with the chia seeds, salt and baking powder in a bowl. Then shredded the carrot finely. Add the carrot to the mixture, then add the eggs and the water and blend into a batter.
Put a baking sheet on a baking tray and form the scones into scones/ buns. Top with some pumpkin seeds and sea salt.
Bake in the oven for about 20 minutes.
